Easy Vegan Red Lentil Dahl
Veganuary doesn't have to be boring nor does it need to be expensive. This easy vegan red lentil dahl recipe truly is a one pot wonder that only requires the occasional stir. Ideal for when you don't feel like cooking but want to eat something healthy and filling. This recipe serves 4 people and only takes 20 minutes to cook.
Ingredients
260g red lentils - washed
1 vegetable stock cube
3 cloves of garlic - thinly sliced
2 tbsp of light soy sauce (no need to add salt)
1 tbsp medium curry powder
1 x 400g tin of chopped tomatoes
1 x 400g tin of light coconut milk
Black pepper
1 lime
Fresh coriander and red chillies to garnish
Coconut yoghurt (optional)
How to make it...
- To get any impurities out, run your lentils under a cold tap and rinse well. Once clear, leave to drain to one side while you slice your garlic.
- Next, simply add all our your ingredients to a saucepan and put it on a low-medium heat (or on the simmering plate) and cook for 20 minutes or until cooked. Stir occasionally to prevent the lentils from sticking to the bottom of the pan.
- Once cooked, serve in a bowl and top with coriander, a slice of lime, thinly sliced chillies and coconut yoghurt as you like. Simply serve alongside a warm naan bread or white/brown rice.
Variations
1. For even more nutrition, simply add 200g of peeled and sliced carrot at the beginning of the cooking process. Cook until soft.
2. Good quality sausages and chicken go well with this recipe.
