Na's No-Knead Cheesy Bread

Na's recipe simplifies the process, making it accessible to all bread enthusiasts, regardless of their baking experience. So, grab your apron, preheat your AGA, and let's embark on a culinary adventure with Na's No Knead Cheesy Bread.
Ingredients
- 500g bread (strong) white flour
- 1/2 tsp dried yeast
- 1 1/2 tsp salt
- 125g grated cheese (mature cheddar, gruyère etc.)
- 1 - 2 tsp fresh or dried thyme or mixed herbs (optional)
- 350g warm water
This recipe will make a medium-sized loaf.
Use the AGA roasting oven to bake, or a conventional fan oven at 200°C.
Method
- Weigh the flour into a large mixing bowl and add the dried yeast, cheese, thyme (or mixed herbs) to one side of the bowl.
- Then add the salt on the opposite side to prevent slowing down the yeast fermentation. Briefly mix together, ensuring that all of the ingredients are distributed evenly.
- Next, add the warm water and mix it into a dough. Cover the bowl with either a damp tea towel or a layer of cling film and leave it to prove at room temperature for 12 hours or overnight.
- With floured or wet hands, scoop the risen dough out of the bowl and onto a floured surface.
- Shape into a ball and place on the heated pan. Dust the top with flour and score with a sharp knife.
- Then put the lid on the pan and bake in the AGA roasting oven for 30 mins.
- Remove the lid and bake for a further 10-20 mins until the loaf sounds hollow and feels light.
- Serve warm or cold with a good lashing of butter.
