Grilled Peaches with Mascarpone Cream

A perfect taste of summer; easily cooking in the AGA roasting oven, at the top of the oven for natural grilling.

A perfect taste of summer; easily cooking in the AGA roasting oven, at the top of the oven for natural grilling.

Ingredients

3 large peaches

2 tbsps butter, melted

2 tbsps soft brown sugar

1/2 tsp cinnamon (optional)

1/2 tub of mascarpone cream - well stirred with a fork until smooth.

How to make it...

  1. First melt the butter and the sugar - in a small dish on the back of the warm AGA enamel for 10 - 15 mins.
  2. Cut the peaches in half and remove the stones.
  3. Lay the peaches cut side up on a baking tray or in a gratin dish.
  4. Spoon over the melted butter and sugar mix, sprinkle with cinnamon if using and cook in the AGA roasting oven, on the first set of runners at the top of the roasting oven for 10 mins or so until golden brown.
  5. Serve warm or cold with cold mascarpone cream or ice cream and accompany with a little shortbread biscuit or small piece of shortbread.

AGA Tip

To cook in an eR7, use R9 setting on the roasting oven for faster natural grilling. The grilled peaches can be chilled for 48 hours until needed. Not suitable for freezing.
