Cheese & Herb Scones
A definite crowd-pleaser! On their own with butter for breakfast or for dunking in hot soup, these tasty cheese and herb scones are super quick and easy to make. This recipes makes 6-12 depending on how chunky you like them! Recipe by Naomi Hansell.
Ingredients
- 450g plain flour
- 3 tsp baking powder
- 1/2 tsp salt
- 120g butter, cold, in pieces
- 140g mature cheddar cheese, grated
- 2 tbsp chopped herbs, chives, thyme, parsley or whichever you prefer
- 240 ml milk
How to make it...
- Weigh the flour, baking powder and salt into a large bowl. Add the butter and rub in until the mixture looks like breadcrumbs.
- Add the grated cheese and the herbs and mix together.
- Finally, add the milk and mix together briefly by hand until it forms a dough. No need to knead - it will just make the scones tough!
- On a floured worktop, gently press the dough out to flatten into a round to the depth of 3 cms or so. Either cut into 6 - 8 triangles or cut into rounds using the cutter of the size of your choice.
- Arrange on a floured baking tray - the AGA cold plain shelf is ideal - and bake in the AGA roasting oven, on the 4th set of runners for 15 mins or so until the scones are browned and feel light to lift.
- Serve warm, buttered, with more delicious cheese and some apple and pear chutney.
