The Best Chocolate Birthday Cake

Are you looking for the BEST, the EASIEST and the most DELICIOUS chocolate birthday cake? Here it is!

This cake serves 12 generously although if you were making it for a little person's party you could easily get 24 servings by halving the cake before cutting slices.

For the sponge you'll need:

80g unsalted butter

280g golden caster sugar

190g plain flour

50g cocoa powder

1 tbsp baking powder

1/4 tsp salt

240ml whole milk

2 large eggs

For the frosting:

300g milk chocolate

300ml double cream

Preheat your oven to 190C and line and grease a loaf tin.

Start by mixing together the butter, sugar, flour, cocoa powder, baking powder and salt until you get a crumbly consistency. In a separate jug whisk together the milk and eggs before pouring this slowly into the dry ingredients stirring continually. Try not to over mix too much, just enough to blend everything nicely together.

Pour the batter into your prepared loaf tin and bake for approximately 40 minutes, or until the cake is well risen and a skewer comes away clean. Leave to cool completely.

Now, making the frosting is quite an involved process that may take you past the limits of your culinary capabilities. I am, of course, joking...it literally couldn't be any easier unless you bought it and even then you'd have to leave the house, pick something off a shelf, pay for it, get it home, eat it. Tough work. So, break up the chocolate (trying to avoid any accidentally slipping into your mouth) and put it in a saucepan over a very very low heat. Take your time over this, melting chocolate directing like this is not the time to rush. Once it's melted stir in the double cream and you have frosting.

Slice your now cooled cake in half horizontally and apply chocolate frosting liberally all over. We then decorated our cake with a mixture of multi-coloured sweets.

A couple of things to note if your making it in advance for a party - the sponge keeps really well and will easily stay moist for 4 days. The frosting naturally hardens, and if you want to prepare it the day before it will be fine, but it wont be quite as unctuous as if it's newly done.
